Canning Apple Juice

I put my apples directly into the pan with the syrup while it was heating up. I learned they needed to release air or they would float. I just canned 28 quarts of my lovely fresh delicious home pressed apple cider, pressed on an over 100 year old cider press. I thought it would still be delicious by all the comments here. Followed your directions exactly as posted. But it now just tastes like the crappy apple juice you buy in the store.

Refrigerate your juice once the jar is opened and consume within a week. Yields about 6 pint sized canning jars depending on the juiciness of your apples. If you have pie apples, you are good to go. Your only decision then is whether to can with sweetener, or plain.

I’ve yet to mess up royally, but also disappointed sometimes. For this recipe, would apple cider work for the syrup. OR maple syrup added to the water instead of sugar or honey?

You can go ahead and squeeze the bag to press out the liquid. Heat the juice to 190˚F for 5 minutes, and proceed with canning as described in the recipe above. Spread a dry kitchen towel on the counter, remove the jars carefully from canner, and place on the towel. Keep the jars upright, and don’t tighten bands or check the seals yet. Let the jars sit undisturbed for 12 to 24-hours to cool completely. For more details on how to use a water bath canner, follow these instructions. It is sealed if there is no clicking sound. Turn the heat setting to its highest position, cover the canner with its lid and heat until the water boils vigorously. Reduce heat to maintain a gentle rolling boil. Re-adjust headspace if needed by adding extra apple slices or liquid. If they sealed and “popped” then they don’t require any refrigeration.
